Wegman’s Cake Copycat Version 1

When we visit Maryland, we get to have random foods we don’t normally have here, and a new tradition is the Wegman’s ultimate vanilla cake. I have been trying to nail the texture and taste of the cake because it is the best vanilla cake I’ve ever had. Some of it is of course due to store preservatives and all that I am not reproducing at home, but I figure I can always work on trying to master a vanilla cake.

So, I found two recipes I wanted to try. When I was trying to decide, I saw that one called for 6 Tablespoons of butter in the cake, which I happened to have exactly, so I picked it.

Topic-Changing Thursdays: The Fudgelet is 9.5 years old!

Time keeps passing and we are in the year 2024 which means I will have been a mom for 10 years later this year. In the meantime, we celebrated a half birthday for the Fudgelet. He wanted a chocolate cake with vanilla frosting. I obliged and he was so excited when he saw it. He is at an interesting age where he still has some reactions of a young kid (like excitement over small things, such as seeing a beautiful sunset) but then will sometimes show the maturity (and occasional attitude) of an older kid. It keeps you guessing a bit, but I like the reminders that my sweet baby is still in my ever-growing oldest child.

Chocolate-Topped Cookies, take 2

How did I do? Still not quite the chocolate-topped cookies from Maryland that I’m used to having, but it was closer. The frosting was better the longer it sat, although the cookies obviously don’t improve with time or stay as fresh since they don’t have preservatives.

Super Soft Parker House Rolls

These rolls ended up super soft and with a good pull to them, as in, not crumbly. They were not hard to make, either. My only complaint is that I wish they had a bit more flavor to them because they almost tasted watered down in some way. However, that might be because I could only buy 1% milk at the store when I went, and my store only carries nonfat milk powder. Maybe next time I would try adding some heavy cream with 2% or whole milk to help counteract the nonfat milk powder.

Tips-y Tuesdays: Piping Bags

I’m fairly certain I’ve shared before that one of my biggest tips for using piping bags is to fill them while they stand in a cup. Well, I came across another two tips that I felt would be useful to share. I haven’t used the first new one yet but the next time I need it, I will. Powdered Doughnut Cake

How can a cake taste like a powdered doughnut? It somehow does. I also keep thinking that doughnut is spelled incorrectly. It is a funny word to type repeatedly. Anyway…this is the first cake I made from a book I was gifted for Christmas, and probably just the first of many. After being away for awhile, I have many recipes I want to make, so we shall see what is made next, but this cake was easy and delicious. It also stayed yummy for multiple days.

King Arthur Flour’s Recipe of the Year Cookies

After seeing that King Arthur Flour was sharing their recipe of the year and that it was a chocolate chip cookie recipe, I decided to try to pull up the link. Well, it didn’t work. Then I checked the link on their socials: also down. Apparently it was so popular, I would have to wait. Then I saw they had a youtube video for the recipe and I watched it. There are some very different steps in it from a classic chocolate chip cookie recipe, and I was interested in how it would turn out. They said the cookie would be soft and chewy.
