Pea Pesto

I have not always had good luck with pesto recipes. Mostly, mixing in different nuts or flavors has not worked well for me, so I usually stick with the traditional ones instead. Well, I am glad I branched out with this one. It was so delicious. You could appreciate that it wasn’t the same as regular pesto, but it was in a good way.

Sauteed Bok Choy

During this pandemic, one thing I have had to do more is cook with ingredients I haven’t before. Sometimes my grocery store has been well-stocked with vegetables, but often I have to pick from our non-favorites. There was a time when I was wanting baby bok choy, and they didn’t have any….but they did have regular bok choy. I decided to try it. When I asked K later about why we never buy it, he said it is a lot dirtier and often not fresh/tender. So, we would probably still prefer baby bok choy, especially since it has more of the leafier parts, but I was surprised that bok choy was also good.

Beef Bulgogi

We have eaten beef bulgogi from different restaurants and almost always love it. I was so excited to find a recipe that was easy…and delicious! I definitely want to make it again soon because you can easily prepare a bunch of it and cook batches of it. It also reheats well for leftovers.
