Tips-y Tuesdays: Non-dairy Ice Cream

Nothing too crazy here today. Just ice cream without cream. Now, this isn’t ice cream that will completely fool you into thinking it is normal ice cream. And I would still like to try other options in the future with coconut milk, but this was a great first attempt. The Fudgelet and Chiplet were both big fans.

Mixed Bag Mondays: Curiously Successful

Sometimes I make recipes and want to try making them again not because they were completely satisfactory but because I am curious about how they turned out. This is a bit hard to explain, but basically the recipes are not overly complicated/weird, the end result is edible and potentially pleasant, but there is something not quite right which might require further experimentation.

Chicken Meatball and Bean Soup

Nothing groundbreaking today, but this is a nice soup that can be fine on a warm or cold day. It is light enough to not feel too heavy on a summer day, and is a warm soup which can feel great on a chilly day. It is also a fairly complete meal with the protein and vegetable. If you wish, you can have some bread on the side.

Baked Crispy Fish

We are a fish-loving family. It’s nice to go to the store and pick up whatever is cheapest/freshest/on sale/etc. and know that we will like it somehow or another. I have yet to make a whole fish, which I want to try, but we like our fish in a skillet, grilled, from the sous vide, with sauce, baked, etc. This recipe is a good one if you have someone wanting to dip their toes into fish. We used rockfish instead of cod as the original recipe called for, just because of a sale, but it is a really nice mild fish that worked well for this. The fillets are super thin and you get a lot of crunchy bits to go with the fish. Everyone also really liked the dip.

Vanilla Butter Cake with Vegan Vanilla/Cream Cheese Frosting and Salted Caramel Filling

Were you worried we still lacked an oven? It ended up only being about a week, which is nothing in the long run. I was so relieved to get it fixed. The guy left, I picked up the Fudgelet from school, then came home and made this cake spur of the moment.
