One Tin Bakes Blondies (dairy-free)

I actually made this recipe back when I had checked out the book from the library, and then I was pleasantly surprised when my dad and M sent us a bunch of tin-themed gifts for our 10th anniversary, including the cookbook! I was very happy to own it and make more dishes. These blondies are the best blondies I’ve ever had. They were moist, chewy, but a bit of crunch on the edges and top. Plus, I was able to make them dairy-free and didn’t notice any issues. I’m sure the butter can only improve them.

Wayback Wednesdays: Chicken Tikka Masala Meatballs

Now, even though I have made the sauce from this recipe repeatedly, and even though I did make the meatballs multiple times, it had been awhile since I had made them. This time, I was making a larger batch just because you really can’t have too many meatballs. They can be frozen or even just eaten later in the week.

Mashed Potatoes

I couldn’t believe that I hadn’t shared mashed potatoes on here. I make them regularly, and I am at the point where I don’t even have a detailed recipe. It is more of a “add a bit of this” with tasting required. It also depends on what dietary needs are happening.

Topic-Changing Thursdays: Dear Fudgelet, Part 9

Dear Fudgelet,

I somehow missed writing directly to you last year. The last time I wrote, you were getting ready for kindergarten. Well, we all know how that school year ended…and then first grade was fully remote at home. It has been quite a year (or two, I guess now). We have made use of our extra time at home by doing playtime with the Chiplet, exploring our neighborhood, and mastering new skills like riding your bike and scooter, playing soccer, and working on academics. You have been so amazing through all of this. To keep things “real,” yes, we had some problems, but we are going to always have some rough waters in life, and I don’t think us being home together was what made it rough. I was grateful to get that time with you, since the Chiplet and I had already been missing you when you would be at school, so it was nice to get a little bonus time.

Tips-y Tuesdays: Stir-Fried Green Beans

I decided to make this a tips post instead of a regular recipe post just because it is more simple than a regular recipe. Anyway, I have been trying to perfect my green bean cooking technique, and I think it is still a work in progress, but I am willing to write down some of my main ideas I have learned.

Dairy-Free Nut Butter Oat Muffins

This is the other recipe I had wanted to try that I paired with the last one. These are a heartier more dense muffin. They are perfect for breakfast to help fill you up. K is not an oat fan, so he did not have any, but the kids and I liked them.
