Ina’s Weeknight Bolognese

I made this sauce around Halloween time because it sounded good, easy, and worked with our schedule of many activities. I was able to make the sauce one night while baking that night’s dinner. This way, we had easy sauce ready to go with some pasta. We ended up having enough for a few nights because this made a lot of sauce and we don’t go nuts with our sauce. I opted out of adding the Parmesan and basil to the sauce directly, until I was ready to serve. I also had some without and didn’t miss it. We liked how the sauce was rich in flavor from the beef and wine, but was still a bit sweet from the tomatoes. And, because you use crushed tomatoes, there is no blending needed so you could make this while a baby was sleeping! (That means I am saving this for future meals, too.)

Topic-Changing Thursdays: The Chiplet is 3 Months Old!

I am writing this after a pleasant day with both the Fudgelet and the Chiplet. It has been a rough week. The Chiplet randomly went from doing awesome naps like clockwork to short naps and being cranky about it too. So much screaming and crying from the three of us. And then poor K got to come home each day when we were all exhausted and cranky. So, I don’t know if he just had a rough patch and today is back to normal, or if today was a gift and the “rough patch” is the new normal. Either way, with how fast time is flying, all of the baby sleep problems will be over before I know it.

Thai Basil Beef with Coconut Rice

The other day I went to make the rice part of this recipe and was so sad when I realized I couldn’t find my copy of the recipe. Luckily I tracked it down, and made it differently this time. The first time, I followed the recipe exactly but then the second time I decided to try doubling the rice and keeping the coconut milk the same. It was still creamy and a nice coconut flavor, but allowed us to have more of the rice since that was our favorite part. The beef is also good, don’t get me wrong, but cooking the rice with coconut milk was aaaaaaamazing.

Halloween in February? (Part 2)

I know, it’s Valentine’s Day and I am here talking about Halloween. But you need to understand. I am writing this in October and even if I manage to do something cute or fun for Valentine’s Day, I am not going to be likely to have time to share Valentine’s activities until let’s say Flag Day (ha!). So, I am sharing this while I can and with the idea that some content on here is better than no content, even if it isn’t timely.

What is this Halloween in February nonsense, you say? It’s called…I could delay this post and schedule it in October of this year but it seems so weird when these were all done pre-Chiplet and I want this October to be with ideas for a family with 2 kids and not just the Fudgelet. So, maybe you don’t have a need for a spider cake in February, but maybe you do? Maybe you can use the same idea to make a heart cake? Or something else fun?
