Oven-Baked Crunchy Chicken

I’m here with another quick and easy recipe. I had bought a bunch of Ritz crackers and was wondering if I could use them for a chicken recipe. Instead of going fancy (I mean, we are talking about Ritz crackers…) I took what I already had handy and made this. We loved it and I have made it multiple times. If I want crunchy chicken and I have skin-on thighs, then I make this recipe but if I have boneless, skinless chicken thighs, then I have been making this one I am sharing today.

Turkey Leftovers Solution: Turkey Potpie

Why had I never tried this before? I should say that I have sworn to skip turkey for next Thanksgiving. Instead I plan on making chicken or possibly branching out and making ham. I just feel like turkey is more work than needed, and that I prefer the taste of chicken. One big problem with turkey is it is drier. This potpie takes care of the dryness and lets you enjoy leftovers in a new way.

It is always surprising to me when I find a new pork recipe I will eat. Maybe my tastebuds are changing. This recipe makes way more meat than you need, but we just heated up enough for a meal with the barbecue sauce, and then saved the rest for future meals. You can certainly use the meat however you want, and it is very easy.

Grilled Shrimp Jambalaya

This is not traditional in the slightest. And I am also sharing this during December. But, maybe you could just broil the ingredients for a similar effect. It is pretty simple and fast…but watch how much seasoning you add. What’s funny is that usually the Fudgelet can’t handle any spice, but managed this one okay. The Chiplet actually enjoys spicy food and will request it.
