Cookie Butter Cheesecake

One of my weekly follows is Bake at 350’s Sweet on Trader Joe’s posts. She and her son pick out a new treat each week and review them. In general, I have agreed wholeheartedly with their favorites, so I look forward to what goodies I should pick up from there! Well, I was catching up on all of the older posts in the series and came across the cookie butter cheesecake. That sounded delicious. I rushed to Trader Joe’s and searched frantically, but to no avail. Where was it?? I ended up asking the cashier who said it was a seasonal item. As in, only around Christmas time. What? Boo! So, I decided to make my own version.

Since then, I notice they have cookie butter cheesecake bites in their frozen aisle, but that’s not as impressive as pulling out a whole big cheesecake. So, I made a whole big cheesecake.

Friday Favorites 9

Summer has started, and we are in the middle of celebrating birthdays, seeing family, plane rides, picking out presents, going to a wedding (all 3 of us!), getting new toys…I am getting a bit anxious with it all, but it is all fun stuff (outside of the plane rides…bleh). I hope to share some pictures of our fun this summer. What do you have planned?

Slow Cooker Indian Chicken Curry

Most chicken slow cooker recipes require bone-in chicken, of which K isn’t a fan. I was excited to find a recipe that had flavors we like, and allowed for boneless thighs! There is lots of flavor in this curry.

Pasta with Sausage, Asparagus, and Lemon

This was a recipe I partially sketched out ahead of time, and partially did in the moment. It was a nice, light dish that was filling but perfect for a warm day. If you don’t have asparagus, you could swap in a different vegetable such as broccoli. I would recommend steaming the broccoli first, then adding it in near the end.

Cookie Butter Chocolate Chip Cookies

Today’s post comes to you from a Friday Favorites link! I loved that the recipe was easy and could be made and baked within an hour (less, really). No chilling required! It was really tasty, and a great last minute recipe for when a friend is going to drop by. Two reasons: you get to make it quickly and you have someone to share them with!

Topic-Changing Thursdays: Dear Fudgelet, Part 3

Dear Fudgelet,

It has been awhile since I last wrote to you. We are getting dangerously close to your first birthday, and I just can’t believe it. No way has it been a year! Really? I mean, yes, there has been so much that has happened, but at the same time, I still look at you and think back to being pregnant. Although it is getting hard to remember being pregnant. Probably a good thing if I ever want to give you a sibling, haha. Did you know there are women who enjoy being pregnant? I didn’t hate it, but I am truly not one of those women.
