Wayback Wednesdays: Chocolate Chocolate Muffins

I haven’t been making as many brand-new recipes in this last week because we were having spring break and then I caught the Fudgelet’s cold. So, yeah, I am not up for doing a bunch of stuff right now. Now, I was randomly inspired to make these muffins after we went to Costco and I remembered liking these.

Chicken Tater Tot Nachos

This is kind of a wayback Wednesday post, but I decided to go ahead and post it as its own thing. I wanted to make this tater tot nacho dish again, but I wanted to make it with chicken instead of ground beef.

Wayback Wednesdays: Ham and Cheese Galettes

Originally I was going to remake this recipe the same way I did it originally, but then I ended up making ham for Easter, so I used some of the leftover ham for these.

Tips-y Tuesdays: Steaming Eggs

I happened to come across someone mentioning steaming eggs instead of hardboiling them, and it is so good! I got the idea from J. Kenji López-Alt and I plan on using it most of the time I want hardboiled eggs. It is perhaps a bit faster (especially if you want to cook a bunch at once) and each time the eggs have been so easy to peel.

Friday Favorites 42

Look at me posting another of these favorites not too long after the previous one! I definitely have way more recipes I want to make than I have time to make, but part of the fun is just looking at recipes. We are wrapping up spring break here. Nothing too exciting…we never did big trips on our breaks growing up, and I still feel weird doing it now. It feels like too short a time to do a trip. But, maybe as the kids get older it will be easier to hop on a plane or in a car and go somewhere for a couple days. This year would have been a good one to escape, though, because the weather was not normal spring weather at all. Rainy, sure, that’s normal spring weather, but cold, too?? Nope. We can’t even go see flowers because it has been too cold for them to bloom.

British Scones

I saw someone talking about British scones and how they are different from both American biscuits and scones. Apparently one key difference is they have eggs in them, which is definitely not a normal ingredient for the biscuits and scones I’ve had before. I decided to track down a recipe to try, and I’m glad I did! It wasn’t any harder than making biscuits, and it actually was unique to biscuits and (American) scones.

Wayback Wednesdays: Milk Bar Cornflake Cookies

Not only am I currently in a cookie mode, but I am also actively working on my blog goals. I might still try a brand new recipe or one of the more involved ones, but this one was still a quick and fun recipe. It has been so long since I made these: way before kids, and back at our old house! You can also see how my silicone liners have discolored over the years, haha!
