I’m not normally the come up with recipes completely out of thin air type. I don’t know if that will ever be me. But, I do sometimes make my own thing after being inspired by other recipes. I wanted to do something special for some salmon we had. In a cookbook I found a recipe that used mint (not our favorite ingredient), parsley, and lemon along with a few other ingredients. I decided to take from that and come up with something using what I had on hand. It ended up delicious and something I will make (or riff on) again.
During all of the crazy snow we had this winter, my in-laws were visiting and had their flight cancelled. Not normally a big problem but the grocery stores were stripped clean of essentials which made meal-planning tricky. I was lucky that I had already picked up ingredients for this, originally thinking it would just be for the four of us, but it ended up feeding the six of us with leftovers. And, it was so easy!
Sometimes I look at recipes and get excited for different reasons. Sometimes I get momentarily excited and then disappointed. Like the time I had bought extra large eggs to use in an Ina Garten recipe and realized I could make one of her cakes…only to see that she used an entire can of Hershey’s syrup in it (I didn’t even know it came in a can?). This recipe was both interesting and exciting from the pictures, but as I started to think of ways I could make it okay for the Chiplet, well. Yeah, I couldn’t. So, look at this as a great recipe that I will likely never make again unless he outgrows his dairy allergy. Oh well. Make it yourself and enjoy it.
I know we are a month into spring already, but I figured this was as good a time as any to wrap up winter with some pictures. Maybe you will see something of interest for next winter.

This is the week of me sharing recipes I enjoy making but then I forget to take pictures of them. “Oops Week” maybe? Well, this is a super easy slow cooker recipe that makes my slow cooker extra valuable. I made short ribs in the slow cooker before but this recipe takes the yumminess of short ribs and makes them even easier to cook. This is not for a spur of the moment dinner, though. It cooks for 9 !!! hours and you need to marinate it overnight first, so there’s that. But otherwise, you just dump it all in and turn it on. Super easy. And no browning of the meat required!
