Mixed Bag (Part 10): Cookies and Cups

For my birthday, I had asked for the book from blogger Cookies and Cups. I have liked reading through it, and have even made some of the recipes. I didn’t really alter the recipes much to feel it warranted a whole post for each…I also am still trying to figure out how I feel about the recipes. So far, they are a bit sweeter than I like (shocking!) so I will definitely cut out some sugar with future recipes right from the start. I also don’t use salted butter, and she uses it in most of the recipes. So, I’ve tried adding a bit more salt into the recipes while using unsalted butter. But, I have found them to maybe be a little too salty then. Anyway, still figuring it out. These bars and cookies were good, but probably not ones I would make again.

Tips-y Tuesdays: Upgraded Macaroni and Cheese

For awhile, the Fudgelet wasn’t a big fan of mac and cheese. He liked cheese, but only cold/room temperature. Not hot. He liked pasta, but mostly with tomato sauce. Before I put all of this together, I tried making mac and cheese for him only to realize he wasn’t liking it.

Eggless Chocolate Cake with Fudge Frosting

Since I just posted about K’s birthday cake, I also need to share the Fudgelet’s second birthday cake. Or should I say cakes? I ended up making this recipe into 2 cakes because we were having friends over in the morning for a playdate party and then K was going to celebrate with us in the evening when he was home from work. I figured there is nothing wrong with blowing out candles twice. Speaking of, how many candles do you put on cakes? Always the number for a person’s age? Or a random number/design? Or a combo? I did a random number which confused one of the party guests. We used to do both…one color for the age and then other colors to form a design. Blowing out candles was so fun, why not have more?

Chiffon Cake with Peach Mascarpone Buttercream

This is posting almost 3 months after the fact, and you might think peaches aren’t ideal in October…but here is K’s birthday cake from this summer. I am here to let you know that the peach in the cake is purely from a jelly, so you can make it anytime of year. He requested a peach cake. When I looked into cakes with peaches, I saw that usually they are more of a topping since that is the best way to enjoy peach (raw). I thought about making a strawberry shortcake type of peach cake, but then saw a mascarpone buttercream that I thought would be really yummy. I then decided a peach jelly would be good to connect the flavors. I ended up using a peach/mango flavor I found that K really liked.

Grilled S’Mores

Today is a short recipe. More of an instructional guide, if you will. And hopefully you haven’t packed away your grill just yet. Hopefully.

I’ve mentioned a few times in passing that we bought a grill this summer and I have been using it a bunch. Basically, I have been cooking all sorts of things with it to see how it works and learn what we like cooked on it. (So far, everything!) I’ve grilled lettuce, steak, burgers, hot dogs, chicken (breasts and thighs), bread, vegetables (mostly cauliflower and zucchini), potatoes, and now s’mores.
