BBQ Chicken Meatballs

It’s been a meatball frenzy over here. I have been making different ones and they have all been hits. The kids and I loved this recipe so much. It was easy and came together quickly. Normally I bake my meatballs, but I liked that this was faster and didn’t actually require much oil, so they weren’t greasy like I worried. I might continue skillet-cooking meatballs for now.

The original recipe called for removing the meatballs and cooking the sauce down before adding the meatballs back in, but I just didn’t want to bother with it and it seemed to work just fine.

Directions for BBQ Chicken Meatballs

Adapted from How Sweet Eats

  • 1 pound ground chicken
  • 1 egg
  • 2 teaspoons garlic powder
  • 1/3 cup panko
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • Kosher salt and black pepper
  • Olive oil
  • 1/2 cup BBQ sauce
  • 1/4 cup water
  • 2 Tablespoons honey

Mix in a bowl all of the ingredients except for the last four. Heat some olive oil in a large skillet over medium heat. Form small meatballs and place in the skillet. Flip the meatballs after they brown and continue browning all the sides. When the meatballs are browned and mostly cooked, add the BBQ sauce, water, and a little honey (add more or less depending on your BBQ sauce). Stir and bring to a simmer. Cook until the meatballs are cooked through and the sauce has thickened. Serve! (We ate ours with mashed potatoes and asparagus.)
