I have made ice cream cakes and cupcakes before, but I needed to share this on here to show what I just learned. Even though it’s past summer and you might not care about ice cream anymore. Even if you never considered making ice cream cakes before. I am here to tell you that they are fairly easy, and definitely easier than making a layer cake. Both the decorating and the making parts.
When I made this to go with a pie you will see later this week, some people were immediately on board and some were leery. Not sure why, but they weren’t positive it was a great idea. But, after sampling it, they kept coming back. This recipe makes a LOT, so feel free to scale it down. I wasn’t sure how much people would use, and wanted to have enough. It even kept for a few days in the refrigerator, which surprised me.
There are lots of coconut recipes on this blog. It certainly has nothing to do with my favorite tastes, but more the flavors of loved ones. There is NO chocolate in this pie. What!? I know. I made it for someone’s birthday…before I knew that they didn’t like cream pies. *sigh* Well, now I know. It was still loved by some other coconut friends in my life.
