Baked Crispy Fish

We are a fish-loving family. It’s nice to go to the store and pick up whatever is cheapest/freshest/on sale/etc. and know that we will like it somehow or another. I have yet to make a whole fish, which I want to try, but we like our fish in a skillet, grilled, from the sous vide, with sauce, baked, etc. This recipe is a good one if you have someone wanting to dip their toes into fish. We used rockfish instead of cod as the original recipe called for, just because of a sale, but it is a really nice mild fish that worked well for this. The fillets are super thin and you get a lot of crunchy bits to go with the fish. Everyone also really liked the dip.

Halal-Cart Style Chicken with Rice

This is a perfect recipe to share since I am currently without an oven and you can make all of this with just the stove. In fact, I am making it again because of this. If you’re wondering about the sauce, we were able to enjoy it as a family since I used a dairy-free alternative for part of it, and you don’t even notice it mixed with the other ingredients.

Green Parsley Sauce for Salmon

I’m not normally the come up with recipes completely out of thin air type. I don’t know if that will ever be me. But, I do sometimes make my own thing after being inspired by other recipes. I wanted to do something special for some salmon we had. In a cookbook I found a recipe that used mint (not our favorite ingredient), parsley, and lemon along with a few other ingredients. I decided to take from that and come up with something using what I had on hand. It ended up delicious and something I will make (or riff on) again.

Tunisian Meatballs

Meatballs are a great recipe in my house. Both K and I like them, and I can make them ahead! Plus, with so many varieties of sauces and flavors, you don’t have to get bored. Today’s recipe is easy, even if it has some fancier ingredients, like saffron. This is definitely a recipe I want to make over and over.

Chicken Souvlaki with Tzatziki Sauce

Let’s be honest here. I never feel comfortable pronouncing “tzatziki”. Or comfortable spelling it. I feel like I’m missing something with the word, but I do like it as a food. This dish  paired well with a salad I will share next week. In fact, the recipe for today includes a step where you save part of the marinade for dressing. I feel a bit bad making you wait for the salad, but I am trying to make sure that you have something to read from me each week. Particularly food recipes!

Chicken with Mushrooms and Lemon Sauce

For me, this is the kind of recipe I could almost cook blindly. I like to make chicken in a Dutch oven with sauces and mushrooms. It’s easy and tasty. This is slightly different since I’ve been cooking with lemons a bit more recently. There is something about lemons that make it feel more like summer.
