I know, here I go again sharing a grilled recipe during winter. But, there are a few things to point out. First, it was originally an oven recipe and you could still make them that way. Two, it was a big hit with K and since today is our 10 year dating anniversary, I wanted to share something that reminded me of him. I’m always proud of myself when I can make something savory, especially a vegetable dish, that he really likes.
Look at me, making a soup! It’s a rare occurrence, and trickier now that the Fudgelet is eating our food (he can’t feed himself soup yet, so I need the soup to contain finger foods). The Fudgelet loves spinach, ground meat/meatballs, and pasta, so I figured this would be a hit for him. It took some convincing since the pasta was a new shape and the egg strands made the spinach look and taste different, but eventually he liked it. K was an even bigger fan. He would prefer a different pasta than orzo, as would I…I need to find a store that has a better pasta selection. I can’t seem to find certain shapes, like pastina (what I really wanted to use) or ditalini.
One of the side-effects of blogging with baby is that I don’t have as much time to make food. I am not the fastest person in the kitchen, and I think blogging helped speed me up a bit. I needed to be able to take pictures while cooking in a reasonable amount of time. Sure, my pictures were sometimes rushed or blurry, but I did okay. Usually, I could even take multiple pictures of a step and pick the best one. Well, nowadays I don’t always remember to even take a picture for a step, or there just isn’t time. Maybe we’re running late for dinner (not an issue with adults, but it is with a set dinner/bedtime routine for a toddler!), so I am rushing the food-making process, or my hands are dirty and I would need to stop, wash up, take a picture, dirty my hands again, wash up, etc. and I decide it isn’t worth it, or I just forget. Today’s recipe was more the dirty hand issue. Making dough recipes means flour gets everywhere. We had an ant outbreak this summer, and so I’ve been trying to be extra careful of where flour and other food particles end up in the kitchen. (Although, both sets of neighbors had ants really bad last year, and we didn’t have any, so I guess it might have just been our turn. Sigh.)
You might think of today as April Fool’s Day, but it’s my Dad’s birthday! Because he brings the Italian side to my ethnic background, I needed to share an Italian-American dish today. Chicken Parmesan is a nice simple dish that works well during the week. I like that I can start it in the oven and then relax a bit when I get home from work. The 30 minutes is enough time to even take a shower, or just work on the vegetable side dish. You can serve it with pasta like I did, or make some garlic bread on the side. If you are limiting your carbs, then feel free to leave it out entirely.
