Nothing too crazy here today. Just ice cream without cream. Now, this isn’t ice cream that will completely fool you into thinking it is normal ice cream. And I would still like to try other options in the future with coconut milk, but this was a great first attempt. The Fudgelet and Chiplet were both big fans.
After teasing this a bit a few days ago, here I bring to you a cake recipe. Today is special because it is the first day I drop off the Fudgelet for preschool and LEAVE HIM for 2.5 hours. I know it’s silly to be sad about this when it is only 3 days a week and not even a whole day. Plus I still have the Chiplet at home, but I am pretty sure there might be tears. I am hoping he will be fine and not miss me at all, but I know I will miss him. I even miss him when K takes him out for stuff. He has been my sidekick for 4 years and now my spot as his favorite adult female might get usurped by some fun teachers. If I can manage it, I will make some chocolate chip cookies for when he comes home, just like my mom did every year for our first day of school.
Which has nothing to do with this cake…
This is a whole different kind of cookie.
A few things for this post…one, I had wanted to make these cookies but it seemed silly since I’ve already made Oreos before. But, it’s less silly when your husband loves Oreos. And all things involving Oreos. I’ve been to the Flour Bakeries (several times) but did not try this cookie there because, again, it seemed silly when I could eat so many other special treats there. I wish my stomach had been bigger…but the baby Fudgelet had taken up residence there. Soooo, then let’s move forward to the end of September when I made these cookies.
For my birthday, I had asked for the book from blogger Cookies and Cups. I have liked reading through it, and have even made some of the recipes. I didn’t really alter the recipes much to feel it warranted a whole post for each…I also am still trying to figure out how I feel about the recipes. So far, they are a bit sweeter than I like (shocking!) so I will definitely cut out some sugar with future recipes right from the start. I also don’t use salted butter, and she uses it in most of the recipes. So, I’ve tried adding a bit more salt into the recipes while using unsalted butter. But, I have found them to maybe be a little too salty then. Anyway, still figuring it out. These bars and cookies were good, but probably not ones I would make again.
So, here I am in the throes of summer and I went to write about these popsicles I made…and realized my next posts would be in October! Not that you can’t enjoy popsicles year round, but I figured it might be a bit better if I changed the ordering of some posts and squeezed these in during the end of summer. There are actually two other popsicles I made as well this summer, both fruity, which might get a chance to shine soon…or I will just have to make them and blog them next summer!
Hey, you! If you read the title and decided these weren’t for you, hold on just a minute. Or maybe longer if you need longer to read this. First, you can make these bars without mint. It’s a small amount and you don’t need to substitute anything in for it…just don’t use it. For the “nutty” part, you can use different nuts. I used walnuts, and you could maaaaaybe even do without the nuts. Just make sure you use extra Oreo cookies. I actually think the nuts make it a bit more unusual because they add a nice texture and salty/creamy vibe (since nuts have oil in them). And if you looked and realized you need to chop them, here is another reason to not shy away: use a food processor. I did the cookies and walnuts in it, and it was fast, easy, and made the Fudgelet laugh (I make funny faces for him when I use the food processor so that the loud noise is amusing rather than scary). As far as the coffee goes, you really don’t taste it much. I say “much” just because it is there a bit. Maybe you could just use water? Or add a bit of cocoa powder instead of instant coffee to the water? Could be fun to try.
Do you know what helped get K interested in seeing me again after we started talking, but before we started dating? Discussion of how I make the best fudge in the world. It’s why I named my blog FudgingAhead. Now, I’m not saying I am really so awesome. I am saying that this recipe is awesome. There might be better tasting fudge out there. I doubt it, but it is possible. But, I doubt there is easier fudge that tastes as amazing as this. I’ve shared my recipe for fudge before, but this time I’ve switched it up a bit. I’ve made it into two layers, and changed the base chocolate layer a bit. I would say I’ve improved it. The top layer is another fudge recipe I used to make for my Oreo fan, but it is a bit on the sweet side. I like this two layer version because you get the sweetness tempered by a dark chocolate base.
