I have made carrot cake before, but not since I lived in Maryland. It has been that long! I have made a version of carrot cake muffins so that I was able to send some to my dad (cream cheese frosting wouldn’t ship very well) but not the actual cake. My dad had requested it for one of the possible treats I could make him when we visited this spring. I am not positive which recipe I made the first time for him. But this time I pulled from my favorite cake book: Layered. I took pictures with my phone of the recipe to do my best version there. I knew it couldn’t be identical since I wasn’t going to bring cake pans and all this time.

Since I just posted about K’s birthday cake, I also need to share the Fudgelet’s second birthday cake. Or should I say cakes? I ended up making this recipe into 2 cakes because we were having friends over in the morning for a playdate party and then K was going to celebrate with us in the evening when he was home from work. I figured there is nothing wrong with blowing out candles twice. Speaking of, how many candles do you put on cakes? Always the number for a person’s age? Or a random number/design? Or a combo? I did a random number which confused one of the party guests. We used to do both…one color for the age and then other colors to form a design. Blowing out candles was so fun, why not have more?

This is posting almost 3 months after the fact, and you might think peaches aren’t ideal in October…but here is K’s birthday cake from this summer. I am here to let you know that the peach in the cake is purely from a jelly, so you can make it anytime of year. He requested a peach cake. When I looked into cakes with peaches, I saw that usually they are more of a topping since that is the best way to enjoy peach (raw). I thought about making a strawberry shortcake type of peach cake, but then saw a mascarpone buttercream that I thought would be really yummy. I then decided a peach jelly would be good to connect the flavors. I ended up using a peach/mango flavor I found that K really liked.
