This recipe started off with every thought of me following it word for word. But we don’t like fish sauce, no matter how hard we try. So, I swapped it with some Worcestershire sauce and soy sauce. And then I was going to use skewers but chickened out (pun intended) at the last moment. That’s why my chicken is chopped when it didn’t need to be with the way I cooked the chicken. But, it still ended up delicious the way I made it. We loved it over rice.
Oh my goodness. I did it. I just posted with complaints of not finding a good party salad, and then bam, I made this one and loved it. I have even been enjoying the leftovers! Not only is it super easy to make (one of the easiest side dishes ever), but it was a hit with my friends, too. I can’t say it is toddler-friendly, but I wasn’t intending for that when I picked it. A friend where I used to teach would make a ramen salad that she would share with us and it was so good! I didn’t think to compare until just now, but when I looked, hers is almost identical to the ingredients except no slaw, it used edamame and sunflower seeds, and you could add the seasoning packets, but she never did.
I know, I know, here I am with another braised chicken recipe. Well, whatever, it seems to be the thing to do these days. At least in my world. Or in my house. I’m not saying you have to do it, but here is another option to tempt you. This one seems kind of weird, but I was able to convince K when he knew egg would be in the sauce and on top. That sounds like a win for him. I’d rate this dish as middling-fussy. You have to do a little stove cooking and then wait for a bit with it in the oven, and then finish with a sauce. But, you could read a book during the oven time, browse the internet, play a video game…I don’t know what you people without kids do with your free time. I don’t remember free time. Aaaaannnnyyyway, if you have made braised chicken before and want to try something different, or just were waiting for a different recipe to make you start braising chicken, here you go.
I used to make granola, back when I ate yogurt because it was supposed to be good for me. But then I realized that yogurt either had too much sugar, used fake sugar, or was way too sour for me. Soooo, I gave up on my granola making. Since then, I’ve eaten lots of different kinds of cereal, but never been entirely pleased with any of them. The ones I liked the most tended to be pricey, and it was a pain to wait for sales when I was running low. I found a post where someone made granola with applesauce to replace some oil. I thought that was such a neat idea, so I decided to try making granola again. This time, I would add almonds since I discovered how much I liked them in other cereals I was eating.
