I’m not normally the come up with recipes completely out of thin air type. I don’t know if that will ever be me. But, I do sometimes make my own thing after being inspired by other recipes. I wanted to do something special for some salmon we had. In a cookbook I found a recipe that used mint (not our favorite ingredient), parsley, and lemon along with a few other ingredients. I decided to take from that and come up with something using what I had on hand. It ended up delicious and something I will make (or riff on) again.
Are you in need of a quick chicken dinner? Well, today is your lucky day. Not only is it chicken, but it is chicken breasts. You could totally do chicken thighs, but I think it is hard to find good recipes for breasts to keep them from being dry. I’d rather save my chicken thighs for more finicky dishes, like a stir fry. This is also allergy-friendly since I first made this when the Chiplet couldn’t have any nuts at all, and I like that I can use a butter substitute if dairy is an issue.
Here is another meal where I made it slightly more complicated due to allergy restrictions. But, you can definitely make it in one dish if you wish, and it is fairly simple with ingredients. We hadn’t had couscous for awhile, and I have always liked it. Something about the texture is really fun for me. But, I have had a really hard time typing it up today. Between writing couscouc, coucscoucs, and every other iteration, whew! I am ready for bed.
For today’s recipe I came across a recipe that looked fairly simple and fast but still appealing to us. I made some changes and it was so easy and delicious!
I was meal planning for the week and was looking for main courses when I came across an asparagus and fennel soup. Now, you might say…where is the fennel? Well, I saw this soup but figured it wasn’t prime season for asparagus, leeks, or fennel right now so I would wait. While I was at the grocery store I actually saw some good looking asparagus. When I went to cook it that night, I decided to look back at the soup recipe. I missed most of the key ingredients but decided to do my own version. It ended up so good that all of us loved it. Even the Chiplet kept asking for more, pointing at that bowl over his meat (his usual favorite part of a meal).
We were going to be going over one of the Fudgelet’s school friends’ houses and I wanted to bring a snack. My usual ideas wouldn’t work because the other boy has various allergies. Somehow I happened to think of cheese crackers. I hadn’t made them since I was dating K and still living in Maryland. The crackers tasted even better than I remembered and were worth the effort. But, as is the nature of toddlers, the other boy ended up not even having any. Haha! Ah well. The mom, Fudgelet, and I were big fans.
