I’ve been wanting to make a jellyroll cake for a long time. I’ve found so many recipes for them that look good, and I’ve watched videos, read about them…I’ve even made one. I made it back in college when I was still learning how to cook different recipes. When I tried making one then, it turned out like a big cracker. I realized that I had forgotten the sugar, and I’m not sure if anything else was wrong, but yeah. It was an epic failure. I couldn’t even practice the rolling part. Well, I finally got the courage up and I made one. It turned out better and was easier than I thought. But I still learned some tricks.
A little while ago I shared that I had made a vanilla cake recipe from my favorite cake book to make cupcakes for the Fudgelet. I also used the same recipe to try out my new number/letter cake pan. Maybe not the best idea to use a new recipe and a new pan, but it worked pretty well. The cake pan had a little bit of a learning curve but nothing crazy and we liked the cakes we got. Basically, the letter pan is about the same amount of batter as an 8 inch cake, so I ended up having some batter left that I used for a round cake.
A friend was getting married and she was doing a smaller celebration, but had invited me to be a witness. I wasn’t sure if she was going to have a cake, but I knew her favorite cake flavor and I wanted to make one for them, even if they were also having additional cake. So, I had this plan but didn’t tell her since I wanted it to be a surprise. I had also thought of incorporating these brownies somehow since they are one of her favorite treats but I didn’t think it would work well as a cake layer. I bought a box for the cake and it was a bit larger than I intended so I had to make a cake to match. I went from making “maybe a 3 layer 6 inch cake” to a 4 layer 8 inch cake with lots of frosting.
After teasing this a bit a few days ago, here I bring to you a cake recipe. Today is special because it is the first day I drop off the Fudgelet for preschool and LEAVE HIM for 2.5 hours. I know it’s silly to be sad about this when it is only 3 days a week and not even a whole day. Plus I still have the Chiplet at home, but I am pretty sure there might be tears. I am hoping he will be fine and not miss me at all, but I know I will miss him. I even miss him when K takes him out for stuff. He has been my sidekick for 4 years and now my spot as his favorite adult female might get usurped by some fun teachers. If I can manage it, I will make some chocolate chip cookies for when he comes home, just like my mom did every year for our first day of school.
Which has nothing to do with this cake…

Did you read the title? If you did then you can see that I made multiple cakes for the Fudgelet this year. We made rainbow cupcakes for his actual birthday and then his birthday party was a few weeks later. Since his birthday is so close to K’s birthday, we just made a small batch of cupcakes and then made a big cake for K this year (some years I do a smaller cake for K). And I knew the Fudgelet would get more cake at his party.

K and I are welcoming another year of marriage and this was something I made to welcome him home one night. It was really easy to make since no mixer needed to get pulled out and it was small amounts of ingredients, so no large bowls required.
I have made carrot cake before, but not since I lived in Maryland. It has been that long! I have made a version of carrot cake muffins so that I was able to send some to my dad (cream cheese frosting wouldn’t ship very well) but not the actual cake. My dad had requested it for one of the possible treats I could make him when we visited this spring. I am not positive which recipe I made the first time for him. But this time I pulled from my favorite cake book: Layered. I took pictures with my phone of the recipe to do my best version there. I knew it couldn’t be identical since I wasn’t going to bring cake pans and all this time.
