French Onion Mac and Cheese

This recipe was good, although I wouldn’t make it regularly just because it takes a lot longer. But, I really liked the flavor from the onions. I also liked baking it and found that the leftovers tasted even better because they got baked for longer. I would recommend baking for a good bit to enhance the caramelized onion flavor.

Unfortunately, I didn’t take many pictures for this. However, it is very similar to my normal mac and cheese recipe. You are basically just caramelizing onions and adding them in.

Directions for French Onion Mac and Cheese

  • 5 Tablespoons butter (or alternative)
  • 1.5 cups thinly sliced onions
  • Kosher salt
  • 8 ounces pasta (some sort of tube shape, or you can mix it up)
  • 1/4 cup flour
  • 1.25 cups milk
  • 1.25 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Black pepper
  • 2 cups grated Gruyere cheese
  • 1 Tablespoon olive oil
  • 1 cup fresh breadcrumbs (just use a food processor for some fresh bread)
  • 1-2 Tablespoons minced garlic

Melt 2 Tablespoons of butter in a large pan over medium-low heat. Add the onions with a pinch of salt, stir, and cook for about 45 minutes to caramelize the onions. Stir occasionally to keep the onions from burning.

Meanwhile, cook the pasta according to the package directions and preheat the oven to 375 degrees F.

When the onions are done, transfer to a bowl. Melt the remaining butter in the skillet and then whisk in the flour until smooth. Gradually whisk the milk into the pan, then add the beef broth and Worcestershire sauce. Stir occasionally, cooking until the sauce thickens. Remove from the heat and stir in the thyme, some salt and black pepper, and the cheese. Once the cheese is melted, stir in the onions and pasta.

Pour the mixture into a baking dish then top with some garlic breadcrumbs. To make the breadcrumbs, simply heat the oil in a frying pan, then add the breadcrumbs, stirring to coat them. Over medium heat, toast the breadcrumbs. Once they are lightly golden, add the garlic and cook for another minute. Add salt and pepper to taste.

Put the breadcrumbs on top, and then bake in the oven for about 15-20 minutes until lightly browned. Let it sit for about 10 minutes before serving.
