Now, even though I have made the sauce from this recipe repeatedly, and even though I did make the meatballs multiple times, it had been awhile since I had made them. This time, I was making a larger batch just because you really can’t have too many meatballs. They can be frozen or even just eaten later in the week.
This time, I couldn’t find decent ground chicken at the store, so I did something else I hadn’t done for awhile, which was to grind some meat. I have the attachment for my mixer, which is what I used this time, too. It worked even better than I remember previously. I ended up combining the chicken I ground with some ground turkey from our freezer that needed to get used. I had bought it thinking I could get the family interested in it, but nope, not happening. This was the perfect recipe to use it since you couldn’t taste it through the seasoning.
These meatballs were so good! Next time, K said to make them smaller so that they could really soak in the sauce more. There will definitely be a next time, and hopefully sooner than last time.
