Oven-Baked Crunchy Chicken

I’m here with another quick and easy recipe. I had bought a bunch of Ritz crackers and was wondering if I could use them for a chicken recipe. Instead of going fancy (I mean, we are talking about Ritz crackers…) I took what I already had handy and made this. We loved it and I have made it multiple times. If I want crunchy chicken and I have skin-on thighs, then I make this recipe but if I have boneless, skinless chicken thighs, then I have been making this one I am sharing today.

Also, if you tried this cornflake chicken recipe, this one has more flavor and crunch.

Directions for Oven-Baked Crunchy Chicken

  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 8 Ritz crackers (or similar buttery cracker)
  • 4-6 Chicken thighs, trimmed
  • A few Tablespoons mayonnaise
  • Baking spray

Preheat the oven to 400 degrees F. Line a baking sheet with foil or parchment paper. Take the seasonings and mix them together in a flat dish with sides. Take the Ritz crackers and crush them, then add them to the seasoning dish. Take the mayonnaise and rub it on the outside of the chicken thighs so that they have a light coating. Dip the thighs in the seasoning/cracker mix and then place on the baking sheet.

Spray some baking spray on top of the thighs. Bake the chicken for about 25 minutes, or until cooked through. The baking spray helps to brown the tops of the chicken. If it isn’t browning enough, you can always add a bit more.
