Beef Quesadillas

This meal is pretty quick…there is a little chopping, but then you can just use one skillet and have each quesadilla come out every few minutes. I always cook the Fudgelet’s one first (longest to cool) and mine next to help with the test batches. K gets the freshest/best looking depending.

One of the Fudgelet’s favorite lunches is quesadillas. They are both fairly quick to make, and I can throw in random fillings (like cooked chicken) to beef them up a bit (sort of a pun?). One of my favorite add-ins is a tomato/basil/garlic seasoning I have. I use it for grilled cheese, too. It adds a little something special to cheesy dishes. The one I buy is from Mrs. Dash, but I’m sure other brands make a version, too.

Directions for Beef Quesadillas

  • 1/2 pound ground beef
  • 1 teaspoon ground chili powder
  • 1/4 teaspoon ground cumin
  • 1 teaspoon tomato/basil/garlic seasoning mix
  • Salt
  • Pepper
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onion
  • 1-2 cups shredded cheese (your choice)
  • Tortillas (about 4-6 depending how much you fill them)

Begin by sauteing the ground beef in a large skillet. Season it with the chili powder, cumin, tomato/basil/garlic seasoning mix, and some salt and pepper. Break apart the ground beef as you cook it.

When the ground beef is almost cooked through, add the tomatoes and half of the cilantro and green onion. Stir, cooking until the tomatoes break down and release their liquid. Continue cooking until the liquid mostly is absorbed or evaporates. If desired, add more seasoning to taste.

 

When the tomatoes are ready, add the remaining cilantro and green onion. Then, remove from the skillet and set aside in a bowl. To make the quesadillas, heat/cook your tortillas as necessary, then place some of the shredded cheese on one half of the tortilla. Spoon a bit of the meat mixture on top, then close the tortilla (fold it in half) and flatten it a bit with a spatula or pan.

Flip after a minute or two when the bottom has browned. Brown the other side and it is done when the cheese is melted. Turn the heat up or down as necessary. Repeat with the remaining filling, cheese, and tortillas.
