No-Bake Peanut Butter and Chocolate Granola Bars

I alllllllmost named this as a Fudgelet Food post. Almost. He has had some, and I made it Fudgelet-Friendly (no nuts), but let’s be honest. I really wanted this for myself and have been enjoying it as a filling afternoon (morning and evening) snack. It’s mostly healthy as far as treats go, and it makes both the Fudgelet and myself want more.

Note: The bars are a bit on the sticky side, so I have alternated freezing them and/or refrigerating them. In the fridge, they are still a bit on the soft side. From the freezer, you either need to pop them in the microwave for about 15 seconds first, or let them sit out. They aren’t the best for travel, for this reason, but I enjoy them when I am hungry and want something sweet but need more than a piece of candy.

Directions for No-Bake Peanut Butter and Chocolate Granola Bars

Adapted from Spoonful of Flavor

  • 1 cup peanut butter
  • 1/4 cup honey
  • 1/2 cup vegetable oil (coconut might work better for keeping the bars more firm, but I used canola)
  • 3 cups old fashioned oats
  • 3/4 cup Cheerios (plain)
  • Pinch of salt
  • 1/4 cup mini chocolate chips

Line a square (8 or 9 inch) baking dish with foil. Spray it lightly. In a medium pan over low heat, stir together the peanut butter, honey, oil, and salt until smooth.

Remove from the heat and stir in the oats and Cheerios.

Spread it in an even layer in the baking dish, pressing it down.

Refrigerate for 10 minutes to chill it a bit, then sprinkle the chocolate chips on top, pressing down on the bars a lot (as much as you can) to help keep them more firm to eat.

Cover and freeze for about 30 minutes or until firm. Slice into bars and store in a container in the refrigerator or freezer (see note above).
