Cookie Butter Chocolate Chip Cookies

Today’s post comes to you from a Friday Favorites link! I loved that the recipe was easy and could be made and baked within an hour (less, really). No chilling required! It was really tasty, and a great last minute recipe for when a friend is going to drop by. Two reasons: you get to make it quickly and you have someone to share them with!

I love mixing my chocolates for cookies, and recommend you do it, too.

The dough was easy to work with and the perfect amount of chewy. I might try it again in the future with peanut butter swapped in for the cookie butter!

Directions for Cookie Butter Chocolate Chip Cookies

Slightly adapted from Warm Vanilla Sugar

  • 1/2 cup (8 Tablespoons) cookie butter
  • 1 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 Tablespoons corn syrup
  • 1 egg
  • 1 Tablespoon vanilla extract
  • 1.5 cups flour
  • Pinch of nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup chocolate chips (I used a mix of milk chocolate, dark chocolate, and mini chocolate chips)

Preheat the oven to 350 degrees and prepare 2 baking sheets. Beat together the cookie butter, brown sugar, oil, and corn syrup until well-combined.

Add the egg and vanilla, beating for 1 minute on medium speed. Meanwhile, whisk together the flour, nutmeg, baking powder, baking soda, and salt.

Stir the dry ingredients into the dough, then stir in the chocolate chips.

When no flour pockets remain, begin scooping out the cookie dough onto the baking sheets.

Bake the cookies for 8-10 minutes until the tops are just set. Cool completely.
