Cookie Butter Blondies with Ganache

So, I kind of took the idea of a blondie and ran with it, turning it into something with cookie butter and ganache…and then putting it in a pie form. Because everything looks cuter as a pie. Except for babies. Babies are just cute on their own. Although, a baby holding a pie? Outrageous cuteness.

I took some crumbs from the pie that stuck to the pan and decorated the top. It’s completely optional. You could also just eat the crumbs. 😉

If you’ve been following the blog carefully, you will realize that this is the week of another Fudgelet Monthly Update. Look for it on Thursday! And then cross your fingers for him on Friday since he will have to have the most shots at one time he has ever had. Poor kid. And poor me, since I’m the one who has to try to comfort him when his legs hurt.

This dessert did not last long. I tried to explain it to K, and then just ended up giving him some to try instead. He loved it as much as I did. Words can’t describe it properly, but if you like cookie butter, ganache, and blondies, I think you will love this as much as we did.

Directions for Cookie Butter Blondies with Ganache

  • 1 cup flour
  • ½ teaspoon baking powder
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (8 Tablespoons) cookie butter
  • 5 Tablespoons butter, room temperature
  • ½ cup granulated sugar
  • 1 cup (packed) light brown sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla
  • 1 cup mini chocolate chips
  • 6 ounces dark chocolate, chopped
  • 1 cup heavy cream

Preheat the oven to 350 degrees. Prepare a 9-inch cast iron skillet by oiling it and placing in the oven until ready to use.

In a mixer, beat together the cookie butter and butter until smooth.

Add the granulated and light brown sugars, beating until well-incorporated (about 2 minutes).

Meanwhile, whisk together the flour, baking powder, ground cinnamon, baking soda, and salt.

Beat the eggs into the butter mixture one at a time, then add the vanilla.

On low speed, add the dry ingredients.

Do not overmix. Stir in the chocolate chips.

Spread the dough into the cast iron skillet.

Bake for about 30 minutes. The color will be medium brown, and a toothpick in the center will come out clean.

Allow to cool completely before continuing.

Heat the cream for 1-2 minutes in the microwave until hot. Have the chocolate in a bowl and pour the cream over.

Whisk until smooth.

Pour over the blondies still in the skillet.

Allow to cool at room temperature.

Slice and serve.
