Chocolate Brownie Cookies

On this blog, I have shared many cookie recipes. Many of them include chocolate. You might think I am chocolate cookie-d out. But I’m not.

I use my baby carrier quite a bit during the day. The Fudgelet gets to be a part of many household chores, especially his favorite: laundry! He loves falling asleep to the movements of Mom folding clothes and putting them away. We even make sure to walk each and every item to its destination, just to drag out the process that much longer. Cooking can be a challenge. I save meat cutting for his brief naps, but I can accomplish many other tasks with him.

It’s hard to make many dessert recipes with a little one around. Cookies are the best bet. Often you can make the dough ahead of time, and even if not, they can be whipped up with a few steps then ready to eat within an hour. Perfect for a nap time break, or even for promoting an hour-long nap.

Now, back to the cookies…these cookies have a great brownie texture. The fudgy kind, that is. What other kind would this blog have, anyway?

Directions for Chocolate Brownie Cookies

Slightly adapted from Ready for Dessert 

  • 1 pound bittersweet chocolate, coarsely chopped
  • 4 Tablespoons butter, cut into tablespoon-sized pieces
  • ½ cup flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 4 eggs, room temperature
  • 75 cups sugar
  • 1 Tablespoon vanilla
  • 2 cups semisweet chocolate chips

Preheat the oven to 350 degrees and prepare baking sheets.

Using the double boiler method, melt the chocolate and butter together until smooth.

Remove from heat. Meanwhile, whisk together the flour, baking powder, and salt.

With a stand mixer, whisk together the eggs, sugar, and vanilla on high speed until a ribbon forms when you lift the attachment (about 5 minutes).

On low speed, stir in the chocolate-butter mixture.

Then stir in the flour mixture, followed by the chocolate chips.

Drop balls of dough onto the cookie sheets, and bake for about 9 minutes.

They will be just slightly firm, like brownies. Cool completely before serving.
