Oatmeal Peanut Butter M&M Cookies

When you are breastfeeding, there are lots of challenges. From learning how to hold your baby, getting him to latch properly, working around any pain, being tired, having enough milk or too much milk, and the final biggie: feeling hungry ALL the TIME. Seriously. I can go from feeling satisfied to full on starving in a minute. You are supposed to eat extra calories, but it’s hard to fit in even the normal calories with a baby needing all of your attention. People talk about lactation cookies, which are essentially cookies with a bunch of ingredients that are supposed to help with milk production. They’re also supposed to make you happy because hey! You get to eat cookies! But they don’t sound very good to me, and they also contain ingredients that I don’t have the time to get. Brewer’s yeast? Flax seeds? Not normal ingredients for me to have around. But oats? Yes, those I have. Soooo, I decided to make my own “lactation” cookies.

Today’s recipe has peanut butter because

  1. I love it.
  2. It has protein.
  3. Maybe it will help the baby like peanut butter later?? (No idea)

It also has M&Ms because…yeah, I just like them and had them. If you don’t have them around, feel free to substitute something else. Nuts, chocolate chips, whatever mix-in you would like. The cookie texture is a bit crispy on the outside, and chewy on the inside.

It was a bit tricky to take pictures around his head, but not as tricky as licking the cookie dough from the spatula!

Directions for Oatmeal Peanut Butter M&M Cookies

  • 1 cup rolled oats (old-fashioned kind)
  • 1 cup packed light brown sugar
  • 1.25 cups flour
  • ½ cup (8 Tablespoons) peanut butter
  • ½ cup M&Ms
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup water
  • 4 Tablespoons butter, melted
  • ¼ cup golden syrup (or a mild-flavored honey)

Prepare baking sheets and preheat the oven to 350 degrees. In a bowl, stir together (or use your hands to mix) the oats, brown sugar, flour, peanut butter, M&Ms, baking soda, and salt.

Stir in the water, melted butter, and golden syrup until well-combined.

Scoop out balls of dough onto the baking sheets.

Bake for about 10-12 minutes until lightly browned. Let them cool on the sheets then transfer them to a container or eat!
