Smores Cookies

Because I have been getting ready for the baby’s arrival, I am scheduling these posts ahead of time. This means that I could be holding a baby right now for all I know. Today is his due date after all. We get to find out if he is more like his mom (early) or dad (late). Regardless, you deserve a cookie recipe. But in honor of the impending doom baby, here is a heart cookie!

The shape was completely accidental, by the way. It just baked that way. How cute!

This recipe makes a good 2-3 dozen cookies. Mmmm.

And, bonus, they remained soft!

Directions for Smores Cookies

Adapted from Baked by Rachel

  • 75 g light brown sugar
  • 60 g granulated sugar
  • 10 Tablespoons butter, softened
  • 1 Tablespoon vanilla
  • 1 egg
  • 30 g bread flour
  • 80 g graham flour
  • 125 g cake flour
  • 5 g baking soda
  • 3 g baking powder
  • 3 g kosher salt
  • 40 g crushed graham crackers (not crumbs)
  • 1 cup mini chocolate chips
  • 1 cup mini marshmallows

Begin by creaming together the brown sugar, granulated sugar, and butter in a mixer until fluffy, a few minutes on medium speed.

Then, add the vanilla and egg, again beating until fluffy (2 minutes).

Stir in the 3 flours, baking soda, baking powder, and salt. Just before everything is well-mixed, stir in the remaining ingredients.

Cover and chill in the refrigerator overnight.

Preheat the oven to 350 degrees. Scoop out the cookies onto prepared baking sheets when ready to bake. Bake for approximately 15 minutes until the cookies are lightly browned. Allow to cool completely before eating.

      • Oh! Congrats, congrats!! I’m so happy for you and your family! know there are many sleepless nights ahead (been there, done that!) but remember to take in one day at a time and to ask for lots of help!! Enjoy the new bundle…can’t wait to get details. : )
