Glazed Ground Chicken with Fried Rice

I was excited to have another ground chicken recipe. This one reminds me of eating at a Panda Express, in a good way. K loves that place and this gives a bit of the teriyaki chicken with fried rice feel. He made the fried rice, since that is his specialty. I made the chicken, and together, voila!

This recipe came together pretty quickly. Once you have the marinade going, the actual cooking time is closer to 30 minutes, including slow prep work. We had some roasted carrots on the side which paired well (sweet and salty).

I thought it was amusing that K said, “we must remember that ground chicken is as versatile as ground beef.” Victory!?

Directions for Glazed Ground Chicken with Fried Rice

Chicken Marinade

  • 3/4 pound ground chicken
  • 1/4 teaspoon ground ginger
  • 1.5 teaspoons sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon white pepper
  • 3 Tablespoons cornstarch
  • 1-2 Tablespoons soy sauce
  • 1 teaspoon mirin
  • 1/2 teaspoon sesame oil

Mix all of the ingredients above and marinate in the refrigerator for at least one hour, or up to overnight.

Glaze

  • Oil
  • 1 green onion, chopped
  • 1/2 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 2-3 Tablespoons soy sauce
  • 1 teaspoon mirin
  • 1 teaspoon cider vinegar
  • Chili oil (a small bit)

Mix together the soy sauce, mirin, cider vinegar, and chili oil, then set aside.

In a large pan, heat some oil. Add the marinated ground chicken and brown (in batches if necessary). Continue to cook until almost cooked through.

Add the green onion, ginger, and garlic to the pan.

Stir together and after 2 minutes, add the soy sauce mixture.

Stir to coat.

Serve with a side of fried rice (minus the meat).
