Beef and Slaw Stir fry

Almost every month we fly home to visit family and I use those long plane flights to go through my many magazines. I will pull out pages I want to keep (recipes, workouts, interesting ideas, etc.) then toss the magazine or leave it for the next bored passenger. The problem with this is that I sometimes put them away when we return and then forget to do anything with them.

This trip was different. I decided to go ahead and make the meals I had pulled when we returned. It worked nicely–I had the recipes with me, so I could easily figure out which ingredients I needed to buy on my home from the airport. This meal was inspired by one of those recipes, but I just used some of the ingredients and then made it my own. We enjoyed that it was healthy, but still tasted yummy.

Ingredients and Directions for Beef and Slaw Stir fry

  • 1/2 lb beef, sliced thinly or cut into small pieces for a stir fry (you can choose to marinate it or not–I just put some ground pepper with it)
  • 2 garlic cloves, minced
  • 1/8 cup lime juice
  • 1 Tablespoon sugar
  • Red pepper flakes
  • 1/2 teaspoon sesame oil
  • 2 teaspoons ginger, minced
  • Corn starch
  • 1 pound bag (approximately) of either cole slaw or equivalent (I used broccoli slaw)
  • 1.5 cups shredded carrots
  • 1/2 cup cilantro, chopped
  • Vegetable oil
  • Rice and chopped peanuts (not necessary)

Start by pouring some vegetable oil in a cold pan. Add in the garlic and heat over medium-low heat to saute the garlic. Let it cook for a few minutes until it starts to darken.

Then, add in the beef.

The meat being partly frozen made it really challenging to cut!

Let the beef brown on one side before turning, as best you can. (Mine was still partly frozen, so it didn’t work super well.) If you have liquid that won’t cook out, add a small amount of corn starch, stirring to help thicken. You can add a little extra cilantro to the beef if you love it as much as I do. Once the beef is cooked, remove it from the pan and set aside.

Cook the beef as well done as you like it.

Meanwhile, prep the sauce for the veggies. Stir together the lime juice, sugar, red pepper flakes (as much as you want), sesame oil, and ginger. Stir until the sugar dissolves.

Pour into the pan with some extra vegetable oil to stir fry the veggies. Add in all of the veggies, stirring to coat. Once the veggies are halfway cooked, add in half of the cilantro.

Continue cooking, and near the end add the rest of the cilantro and the beef. Warm the beef, then remove from heat.

Serve over rice with some chopped peanuts on top (if desired).

Without or with peanuts!
